The cold IPA is a refreshing and hop forward brew that balances the crispness of a lager with the big fruit flavors found in IPAs. Fermented with our house ale yeast at a colder temperature, this beer offers a crisp & clean base that allows the hops to shine. This hop blend provides a pleasant bitterness with notes of berry, pineapple, orange peel, kiwi and peach, rounded out with a light bready backbone from a touch of Vienna malt.

It’s been a minute … but 75 Minute IPA is back! What began as a cask-conditioned ale at our Rehoboth brewpub back in 2011, quickly grew to become a favorite brew amongst craft enthusiasts. From the groucho glasses that adorned the label to it’s slightly dry and lingering bitterness, 75 Minute was (and is) beloved by many. Now in our latest iteration, this classic IPA is brewed with maple syrup and continually hopped throughout the boil for ... you guessed it, 75 minutes, and then dry-hopped with a slew of cascade hops. The result is a malty and earthy brew with citrusy-pine aromas, balanced by subtle maple notes.

More dunking, more juice. This hazy Imperial IPA is hopped with Citra, Citra Incognito, Riwaka and Cashmere giving it strong up front sweet orange and lychee with soft tropical and fruit candy notes punctuated by some punchy passionfruit and a hint of weedy diesel.

Heady Topper is an American double IPA. This beer is not intended to be the biggest or most bitter. It is meant to give you wave after wave of hoppy goodness on your palate. Tremendous amounts of American hops will creep up on you, and leave you with a dense hoppy finish in you mouth. So drinkable, it's scary. Sometimes I wish I could crawl right into the can. Freshness and control have always been my main concern when it comes to our beer. We are committed to providing you with an unfiltered and unpasteurized hop experience. Why do I recommend that you drink it from the can? Quite simply, to ensure a delightful hop experience. The act of pouring it in a glass smells nice, but it releases the essential hop aromas that we have work so hard to retain. If you MUST pour it into a glass, you may find that some of the hop resins have settled to the bottom -- leave them in the can while pouring. This beer is perishable, and at its best when it is young, fresh and hazy. Keep it cold, but not ice cold. Drink this beer immediately, we are always making more. -- John Kimmich

DDH Refreshing (Citra) is our ultra refreshing Lemondrop, Citra, and Galaxy Double IPA, now double dry-hopped with even more JUICY Citra. Brewed with a grist of 2-Row barley and flaked rice, and fermented with our expressive house Ale yeast. Dry-hopped with plenty of the freshest Galaxy, Citra, and Lemondrop, then secondarily hit with a generous splash of Citra. We find this beer Refreshing. Notes of orange blossom water, drippy pineapple rings and tangerine haze.

Eclipse: a world-wide phenomenon straight from our brewery in small town Truckee. It starts with our award winning Totality Imperial Stout, and then spends 6 months in a variety of barrels specially curated by our talented brew team, often finished with some specialty flare that will knock your socks off. To make it, the brewers took their award-winning base Stout, let it rest in bourbon barrels, and finished it with demerara sugar, orange zest, cherries, and bitters.

For Necrølith, our Head Baker Jonathan Sanchez of Jester King Kitchen baked 300 pounds of our Hill Country Sourdough Bread made with 100% Texas-grown grains. We use Barton Springs Mill TAM 105 wheat, Wrens Abruzzi rye, and Rouge de Bordeaux wheat, known for its rich, nutty, cinnamon, and baking spice flavor. We then added the sourdough to an imperial stout mash with English caramel and chocolate malts and oats, the same way we've done in the past for Jester King Kvass. We then fermented it in stainless steel with English yeast.
